Trust me when I tell you, this cake will fool most gluten eaters! It’s decadent without being “too much” and it’s just the right amount of sweet. The frosting is absolute perfection. Velvety and rich, smooth and creamy. It compliments the cake nicely, rather than overpowering it. Be sure to make the ganache ahead of time to allow it to thicken to a frosting type consistency, otherwise it will be more like a traditional ganache being more of a drizzle and likely may not work between the layers. PSSST, this would cake make for a very special Valentine’s Day, just sayin’. Using coconut oil, grease the two 7- inch pans well and line the bottoms with parchment paper, set aside. I used these pans. In a large mixing bowl add the almond flour, coconut flour, baking soda, salt, coconut sugar and cocoa powder and whisk together until well incorporated. In a medium sized bowl add the eggs, honey, coconut oil, coconut milk, vanilla and apple cider vinegar. Whisk until well combined. Add the wet ingredients the dry. Using a large spatula, gently mix to combine all of the ingredients together. Fold until well incorporated. Pour the batter into your well- oiled and parchment lined pans, half of the batter into each pan. Place the pans side by side on the middle rack. Bake 3. 5- 4. 0 minutes until a cake tester comes out clean. Let cool 1. 0 minutes in the pans on a cooling rack. Then invert the cakes onto the cooling rack to continue cooling. Place the first cake onto a cake plate or stand, top with a little less than half of the Dark Chocolate Ganache Frosting, recipe below, (after it has cooled and is thickened up), spread into an even layer and place the first layer into the fridge to firm up, about 3. Top with the second cake and frost with the remaining frosting, spread evenly across the top and sides of the cake, sprinkle with a little shaved chocolate, if you’d like. Serve immediately or store covered in the fridge for up to 1 week. RECIPE NOTES: I make the cakes and the frosting the night before I plan to serve it, then assemble and frost the day of. They started using stone tools and fire, and, as a result, slowly changed their diet. By the time truly modern humans came on the scene about 5. The basic Paleo diet. And thus we arrive at a model of a Paleo diet that includes: animals (meat, fish, reptiles, insects, etc. And thus, we moved from the Paleolithic to the Neolithic period. Planting and farming provided us with a consistent and relatively reliable food supply, without which civilization could never have developed. Yet the 1. 0,0. 00- year time frame since the dawn of the Neolithic period represents only about 1% of the time that we humans have been on earth. Many people believe that the change from a hunting and gathering diet (rich in wild fruits and vegetables) to an agricultural diet (rich in cereal grains) gave rise to our modern chronic diseases such as obesity, diabetes, and cardiovascular disease. This is a fundamental tenet of the Paleo Diet, and a big reason why proponents say we should return to the meat and produce- based diet of our past. How do “ancestral eaters” fare? Of course, while we have extensive skeletal remains, cooking sites, and other types of evidence, we don’t have detailed medical records of our hunter- gatherer hominid ancestors. However, we do have real live sample populations that we can look at. A diverse dietary world. The very few surviving hunter- gatherer populations subsist on a wide variety of diets, from the “nutty and seedy” African ! The Paleo diet also makes some key evolutionary assumptions: Paleolithic hunter- gatherers were robust and healthy; if they didn’t die young from accident or infectious diseases, they lived about as long as we do now. When Paleolithic hunter- gatherers shifted to Neolithic agriculture, they got relatively sicker, shorter, and spindlier. Modern hunter- gatherers are healthy, and their health declines when they switch to a modern diet. What’s the evidence? While a case can be made for this evolutionary trend, as a matter of fact, hunter- gatherers were not pristine models of health. To begin with, they certainly harbored various parasites. They were also subject to many infectious diseases. What’s more, a recent study in The Lancet looked at 1. Egypt, Peru, the American Southwest, and the Aleutian Islands — to search for signs of atherosclerosis. They noted probable or definite atherosclerosis in 4. Over the last century — a period that is undoubtedly far too short for significant genetic adaptation — industrialization and technology have radically changed the way we eat and live. Today, the average American subsists on foods that are packaged and commercially prepared. Rich in refined sugars and starches, highly processed fats, and sodium, these foods are designed to be so delicious that they run roughshod over the body’s normal fullness signals, and encourage overeating. Consider: The top six calorie sources in the U. S. Nor foods that any nutrition expert, regardless of dietary persuasion, would ever recommend. So when proponents of the Paleo diet claim that our modern Western diet isn’t healthy for us, they are absolutely correct. But is the Paleo diet really Paleo? Remember: There’s no single “Paleo diet”. Our ancestors lived pretty much all over the world, in incredibly diverse environments, eating incredibly diverse diets. Still, in most cases, primal diets certainly included more vegetables and fruits than most people eat today. So if we want to be healthier, we should do what our ancestors did and eat a lot of those. And so on. This doesn’t make modern produce or modern meat inherently good or bad. It’s just different from nearly anything available in Paleolithic times. So the claim that we should eat a diet rich in vegetables, fruits, and meats because we are evolved to eat precisely those foods is a little bit suspect. The ones we eat today didn’t even exist in Paleolithic times! Grains and grasses. Proponents of the Paleo diet argue that our ancestors’ diets could not have included a lot of grains, legumes, or dairy foods. And they contend that the past 1. This argument is compelling but doesn’t stand up to scrutiny. To begin with, recent studies in the Proceedings of the National Academy of Sciences, using more advanced analytical methods, have discovered that ancient humans may have begun eating grasses and cereals before the Paleolithic era even began — up to three or even four million years ago! Further research has revealed granules of grains and cereal grasses on stone stools starting at least 1. Meanwhile, grain granules on grinding tools from all over the world suggest that Paleolithic humans made a widespread practice of turning grains into flour as long as 3. In other words, the idea that Paleolithic humans never ate grains and cereals appears to be a bit of an exaggeration. Are beans really bad for you? Grains are not the only plant type that the Paleo diet typically limits. Advocates also recommend that you avoid legumes (beans, peanuts, peas, lentils) — and for a similar reason. However, the idea that legumes were not widely available or widely consumed in Paleolithic times — like the argument that humans didn’t eat grains in the Paleolithic era — is false. In fact, a 2. 00. Paleolithic ancestors eat legumes, these were actually an important part of their diet! In fact, the evidence for wild legume consumption by Paleolithic humans is as strong as it is for any plant food. What about anti- nutrients? Okay. Maybe our ancient ancestors did eat a little bit of grain and some legumes — so the argument from history doesn’t really hold. But Paleo proponents also offer another reason to avoid these foods: Their high concentration of anti- nutrients, which supposedly reduces their nutritional value to zilch. There’s just one problem with this argument. It’s wrong. Indeed, research suggests that the benefits of legumes far outweigh their anti- nutrient content, especially in light of the fact that cooking eliminates most anti- nutrient effects. Lectins and protease inhibitors, in particular, are greatly reduced with cooking. And once cooked, these chemicals may actually be good for us. Lectins may reduce tumor growth, while protease inhibitors become anti- inflammatory and anti- carcinogenic. Phytic acid. But what about phytate? Grains, nuts, and legumes are rich sources of this anti- nutrient, which can bind to minerals such as zinc and iron and prevent their absorption. It’s the simplest yogurt method I’ve found (in my opinion), and I like that I don’t have to wash out my big ol’ stockpot or slow cooker when I’m done. I like to make a gallon of yogurt (4 quarts) at a time since it stores for a long, long time without going bad. If you don’t want to make quite that much, this yogurt recipe can easily be halved or quartered. How to Make Yogurt. Supplies: Large stockpot. Four quart- sized glass canning jars with lids (like these)A thermometer (optional- see note below)A small cooler. Ingredients: 1 gallon milk* (see note below)8 Tablespoons of plain yogurt containing live, active cultures. Instructions: Fill all four jars with milk, leaving a little room at the top– (around 2 inches). If you don’t have canning jars, you can use other repurposed glass jars instead. I usually shut it off when the water is about 3/4 of the way up the sides of the jars. If you are concerned about the jars rattling and breaking, you can place a small dishrag in the bottom of the pot before you set the jars inside. Set the pot on the stove and bring the water to a boil. Allow the pots to simmer until the milk in the jars has reached 1. F. Now there are several ways to accomplish this. Some folks advise sticking them a sink filled with cool water, but I’ve found that leads to a lot of broken jars. I loosely cover the jars with a lid and let them sit for 3. I want the heat to be able to escape, but I don’t want dust/dirt/bugs getting inside.)I like to spread the jars out so they cool down faster. Check them periodically with your thermometer and give the milk a stir to mix up any hot spots. If you don’t have a thermometer– just feel the outside of the jars. You want them to be warm, but not too hot to touch. You are going to innoculate the milk with a live bacteria, and the bacteria likes warmth. However, too much heat will kill it– so anything that is too hot for your hand is probably too hot for the yogurt bacteria as well. Once the milk has cooled sufficiently, gently stir 2 Tablespoons of yogurt into each jar and cap the jars (I never really measure– I just eyeball it. Now, the incubation process begins. There are a lot of different ways to keep your yogurt warm. Some folks like to stick it in their oven and leave the light on, but that is a recipe for disaster at my house. You might need to replenish/reheat the water once or twice throughout the process, but for the most part, it works pretty darn good. Just make sure to keep the cooler in an out- of- the- way place and don’t bump or move it. Allow the yogurt to incubate for a minimum of 8- 1. I generally start my yogurt around 9 am, and then remove it from the cooler right before I head to bed). You can leave it longer if you like, but thelonger it sits, the tangier it will get. Once the incubation process is complete, remove the jars and place them in the fridge. Allow the yogurt to cool completely before eating (it will thicken a bit as it cools). Eat plain or flavor it to your liking. Our favorite toppings are fresh fruit, maple syrup, raw honey, homemade jam, or nuts. Homemade yogurt is also splendid in smoothies, or use my soft- cheese recipe to make yogurt cheese and whey (and we all know there are LOTS of uses for whey!). Kitchen Notes: Use the highest- quality milk you can for this recipe– however– it does not have to be raw, since you are “cooking” the milk at the beginning anyway. Raw yogurt is a tricky topic, as it tends to be pretty runny. My family prefers thicker yogurt, and since the bacteria that is added to the milk gives it a probiotic- punch, I don’t feel bad “cooking” it in this one application. Goat milk can be used for this recipe– but be forewarned– goat yogurt is peculiarly runny as well. You can add a variety of thickeners to goat yogurt, or try straining through cheesecloth to remove some of the whey. Or, just drink it if you don’t mind it being a tad on the liquid- side. Some yogurt methods say to sterilize all equipment before starting the process, but I usually don’t. If you are nervous, then feel free to sterilize first. You can purchase specific cultures for making homemade yogurt, and those work fine as well. I prefer using high- quality yogurt from the store as my starter culture, since it’s easier to obtain. Just make sure the carton specifies LIVE ACTIVE CULTURES. Some of the more processed brands do not contain live bacteria and they won’t work for this recipe. A big carton will make many batches of homemade yogurt, and you can freeze the rest in ice cube trays to keep for later. How to Make Yogurt in a Mason Jar. Large stockpot.
